What is Clarified Butter (Ghee)?

Known as “ghee” in foreign languages, clarified butter was referred to as “revgan-i sade” during the Ottoman period. In Turkish, it is commonly known as “saf yağ” or “sade yağ.” Clarified butter is obtained by removing water and non-fat solids from unsalted butter. The result is pure butterfat containing about 99% milk fat.
